Pineapple Upsidedown Cake

Recently, we had my husband's cousins visiting us from UK, and I had to quickly put together a dessert. And that's when my friend, Abha's, pineapple upside down cake recipe came handy. Trust me, it's superb easy and can be served with a scoop of ice-cream as dessert.


Ingredients:
  • 1 pack of your favorite vanilla/pineapple cake mix
  • 1/2 stick of butter
  • 1-2 tablespoon brown sugar
  • 1 (20 oz) can pineapple slices
  • Maraschino cherries
Preparation:
  • Make the cake batter as per the instructions on the cake packet
  • Preheat the oven to 350°F.
  • Into an aluminum tray add butter and brown sugar, and place it inside the oven for 5-7 minutes until the butter melts.
  • Take it out from the oven and spread the butter-brown sugar mixture evenly on the tray.
  • Arrange pineapple slices and Maraschino cherries in the tray.
  • Now pour cake batter evenly over fruit in the aluminum tray.
  • Bake the cake as per the instructions until toothpick inserted in center comes out clean. This should take around 50 minutes.
  • Once done allow it to stand for 30 minutes.
  • Invert it onto a serving plate.
